Cold carrot and orange soup flavored with lemongrass. Shrimp tartare with lime and olive oil.

For 4 people:

  • 2 oranges
  • 7 carrots
  • 1 onion
  • 1 celery branch
  • 20g ginger
  • 4 sticks of lemongrass
  • 25 cl of cream
  • 50g butter
  • 1 teaspoon coarse salt
  • 4 large prawns
  • 1 lime
  • olive oil, salt and pepper

Cut the shrimp into a tartar, season with lemon and olive oil. Adjust the seasoning and then marinate the time to make the recipe.

Put the butter in a saucepan and melt it. Add the onion and cook for a few minutes without browning.

Add the carrots and celery, then pour the orange juice, the liquid cream, and top up with 1 liter of water to cover the vegetables a little more than the height. Salt with the coarse salt.

Cook for 40 min, then pour everything into a blender and mix.

Return the soup to its pan and bring to the boil; add the ginger and lemongrass. Remove from heat and let steep for 20 minutes.
