Lemon meringue pie

Sweet dough:

250g of flour – 125g of butter – 100g of sugar – 1 egg yolk – 1 pinch of salt – 1 shell of water.

Pour the flour in a bowl in a fountain then put the sugar, the egg yolks and a pinch of salt.

Put the butter all around in an ointment.

Mix and add cold water, in small quantities to mix the dough well.

Let the dough rest for 30 minutes and then lower it to bake it at 180 degrees.

Put a piece of parchment paper to prevent the dough from swelling, for example by placing white beans on the parchment paper.

Lemon cream:

500g whole cream – 300g sugar – 280g lemon juice – 7 eggs

Combine the 4 elements in a saucepan. Cook over low heat until the appliance thickens.

Pour into the cooked dough and let stand for 1 hour.

Meringue :

4 whites – 150 g sugar (more or less depending on your taste).

Beat the egg whites and add the sugar until a thick and very shiny meringue.

Put the meringue on the cooled pie then brown in grill mode in the oven.
